Grilled chicken skewers inspired by Peru
These Peruvian-inspired Grilled Chicken Skewers made from boneless, skinless chicken breasts are succulent and delicious. The chicken is marinated in beer, Sazon and cumin along with spices. The creamy spicy sauce is so good, I’ve been putting it on my eggs, steak tacos, etc. I’ve made these Grilled Chicken Skewers a few times in the past month, and they’ve been such a hit with my family. They are so delicious – the longer you marinate the chicken, the more flavor it will have. This recipe is loosely inspired by my Peruvian favorite chicken with green sauce. It’s easy to make all summer on a grill. I like the sauce spicy so I leave the jalapeno seeds in. But, you can make the sauce milder by omitting these seeds.
Spicy Avocado Aji Verde Sauce
The creamy avocado sauce made with jalapeños will be very spicy if you leave in the seeds, which is how I like it. You only need a little. You can remove the seeds if you prefer milder sauces. The aji sauce will keep for four days in the fridge. It can be used over everything, from scrambled eggs and rice and beans to steak sandwiches and grilled chicken.
What is aji sauce made from?
Mix all ingredients together to make my spicy avocado-aji verde sauce.
- Avocado
- Jalapeños
- Cilantro
- Liquid:Olive oil, white wine, water
- Aromatics: Garlic, cilantro
- Spices:Cumin and salt
Chicken Marinade Recipe
Mix all ingredients in a bowl or zip-lock bag. Marinate the chicken thighs for at minimum three hours, or overnight.
- Light beerI used Corona light, but Modelo and Dos XX could also be used.
- Sazon with achiote You can either buy sazon in the supermarket or make your sazon.
- White vinegar If you don’t have regular white vinegar, swap it for apple cider vinegar.
- Spices: Cumin, salt; garlic powder, oregano
How to Grill Chicken Skewers
- Place the sliced chicken legs on metal skewers. If you’re using wooden ones, you will need to soak them in water first. If you don’t want to make skewers, leave the thighs whole and skip this step.
- Turn the grill on medium heat and oil your grates. Grill the chicken skewers about five minutes per side.
What to Serve With Peruvian Grilled Chicken Skewers
This grilled chicken is served with rice and some of my favorite summer salads like cucumber tomato salad and grilled corn salad.

- 2 lb Boneless, Skinless chicken thighs
- 6 oz Light beer, I used Corona light
- 1 Sazon seasoning packets with achiote, 1/2 teaspoon
- 1 Take one teaspoon Kosher salt
- 3 Spoonfuls white vinegar
- 1 1/2 Teaspoons cumin
- 1 1/2 Teaspoons Garlic powder
- 1 Take one teaspoon dried oregano
Avocado Aji Verde Sauce (makes 2/3 cup)
- 1 1 ounce avocado
- 2 jalapeños, With seeds
- 3 tbsp fresh cilantro
- 2 Spoon Extra virgin olive oil
- 1 clove Garlic
- 2 tbsp white vinegar
- 3-4 Spoonfuls Water
- 1/8 Take one teaspoon cumin
- 1/4 Plus 1/8 teaspoon of kosher salt
