We love egg rolls made from the traditional recipe, but we also love egg roll wrappers that are filled with fun combinations. Broccoli rabe is one of my favourite pasta combinations so these Sausage and Broccoli Rabe Egg Rolls were a natural choice. They’re a great option for a party appetizer since they can be made ahead and frozen and are delicious dipped in your favorite marinara sauce. What is the difference in broccoli and broccoli rabe?

Broccoli and broccoli rabe are very different, but they are very similar. Broccoli rabe is also known as Rapini and has smaller stems and florets that broccoli. It also has leafy greens.

Ingredients for Italian Eggroll Filling

Here’s what’s in these egg rolls:

  • Sweet Italian chicken sausage
  • Broccoli Rabe
  • Shallot and garlic
  • Salt, pepper, and red pepper flakes
  • White wine
  • Parmesan
  • Wrappers for egg rolls

For these egg rolls, I sauté the sausage with broccoli rabe and shallots and then add garlic, salt, black and red pepper, and white wine. Before filling the egg roll, I drain the mixture and add the Parmesan.

How to Freeze

These egg rolls are also easy to make ahead and freeze for quick snacks or apps.

  • To freeze uncooked egg rollsTransfer the contents to a freezer bag. Seal it, making sure to squeeze out as much air as possible. Freeze for up six months
  • To fry the frozen egg rolls in an air fryerTurn the oven on to 320F. Turn them halfway through cooking and let cool on a plate. If possible, serve them immediately with a dipping sauce
    desired.
  • If you’re using the oven, bake frozen egg rolls350F for 25-30 Minutes

Variations:

  • Use a spicy Italian sausage instead of turkey sausage.
  • Substitute broccolini with broccoli rabe
  • You can substitute the shallot with red onion.
  • Instead of white wine, use chicken broth

These Italian-inspired Chicken Sausage & Broccoli Rabe Egg Rolls make an excellent appetizer for the holidays.

  • 16 oz Uncooked sweet Italian chicken sausage, Casing removed
  • 1 Large shallot, Chop
  • 3 Cups Broccoli rabe uncooked, Rapini, chop, discard large stems and use thinner stems
  • 2 Garlic cloves, minced
  • 1/2 Take one teaspoon Kosher salt
  • 1/8 Take one teaspoon black pepper
  • 1/4 Take one teaspoon Red pepper flakes crushed
  • 1 oz White wine
  • 1/4 Cup Parmesan cheese grated
  • 12 Wrappers for eggrolls, Nasoya
  • Marinara for serving, Optional
  • Place the sausage in a large skillet on medium heat. After about 2 minutes, use a spatula to break it down.

  • Continue to cook for 7 minutes, adding shallots.

  • Mix in the garlic, salt and pepper flakes, and wine. Cook for about 5 minutes on medium heat, breaking down the sausages and cooking down the wine.

  • Remove the sausage mix from the heat. Place it in a large bowl and let it cool for around 10 minutes.

  • Drain in a colander to remove excess liquid. Then transfer to a bowl and add the parmesan cheese. Mix well.

  • Assemble the egg roll wrappers: Place one at a time on a clean surface. Points facing down, place the egg roll wrapper on top and bottom of the surface. Place 1/4 cup of sausage mixture on the bottom third.

  • Put your finger in a small container of water and run it along all the edges of the wrapper.  Grab the nearest end of the wrapper and wrap it around your filling.  Continue rolling into a tight circle by folding the right and left corners in towards the center.

  • Set aside and repeat the process with remaining wrappers and fillings.

Air Fryer Method

  • Use your fingers to coat the egg rolls evenly with oil.

  • Air fry in batches at 370F for 7 mins, turning halfway through to brown. Serve immediately with marinara sauce if desired.

Oven Method

  • Bake at 400F.

  • Place the rolls on a greased baking tray coated with oil spray. Spray oil evenly on each roll.

  • Bake the rolls for 6-8 minutes on each side or until they are crispy and golden brown.
