This Avocado Quinoa salad is bright, zesty and delicious. It reminds me of the ingredients I use in my guacamole. This quinoa salad is a great choice for days when I don’t want to eat meat. I’ve published quite a few quinoa salads over the years, and I love all of them, but this might be my new favorite! Another favorite is this Mediterranean Quinoa Salad or this Southwestern Black Bean Mango Quinoa Salad.
I’ve been getting tons of requests for more vegan and vegetarian recipes, so I plan on sharing at least one new plant-based recipe per week. Quinoa is a seed from an edible plant that is rich in both protein and fiber. It is also very nutritious for the body. It’s also gluten-free and perfect for adding to salads.
Avocado Quinoa Salad Ingredients
This avocado quinoa salad has just a few simple ingredients.
- Quinoa:I prefer red or three-color quinoa.
- Avocado: If you’re meal prepping this salad, combine everything and add the avocado right before eating.
- Cucumber
- Tomatoes:I used large beefsteak tomatoes but you could use cherry or grape tomatoes.
- Red onion
- Jalapeño: Leave the jalapeño’s seeds and ribs in if you want a spicy salad. If you prefer milder dishes, you can leave them out.
- Fresh cilantro: Skip the cilantro if you don’t like it.
- Dressing:Olive oil, lime Juice, Salt
How to cook Quinoa for a Salad
Cooking the quinoa correctly is the key to perfect quinoa salads. No mushy quinoa for me! I prefer red or tricolor quinoa. I make a batch in my Instant Pot (see Perfect Instant Pot Quinoa). This can be used throughout the week in salads, bowls, and salmon burgers. I use less water when making quinoa on a stovetop. I use 1 3/4 cups liquid to make one cup of quinoa.
What to serve with Avocado Quinoa Salsa
This healthy quinoa dish makes a great lunch or side dish. However, it is also great served as a vegan dinner. For more people, double the recipe and add the avocado just before serving.

- 1 1/2 Cups cooked quinoa, Red or tricolor
- 8 In ounces haas avocado, 2 small, diced
- Juice of 1 Lime
- 1 Ripe beefsteak, heirloom tomato, diced
- 2 mini cucumbers, diced
- 1/3 Cup chopped cilantro
- 1/3 Cup Red onion chopped
- 1 jalapeño, Slice thinly with seeds
- 1 Take one teaspoon Extra virgin olive oil
- 1/4 Take one teaspoon Kosher salt, Plus, there’s more to try

Combine all the ingredients in a bowl.

Adjust as necessary by tasting for salt and lime juice.

If you’re meal prepping, combine all ingredients except the avocado. Add it when you’re ready to eat.

Multiply the recipe to get more servings
This healthy quinoa salad is a great option for a vegan lunch for two or as a side dish for four with any protein. You can double this recipe to serve more people. Just before serving, add the avocado.
