We love ordering mussels from restaurants, but they are also very easy to prepare. These mussels are quick to prepare. Here I use garlic, white vinegar, anchovies, and crushed red pepper flakes. The flavor is amazing! This is a great appetizer or main course.

How to Clean Mussels before Cooking

Some mussels come cleaned, but if not here’s how to clean mussels before cooking them. You’ll want to remove the beard, which are the strings hanging from the mussel shell.

  • Under cold water, rinse and scrub the mussels.
  • Use your fingers or a paring knife to remove the mussels’ beards.

How long should you cook mussels for?

Mussels cook quickly! After the sauce has been cooked:

  • Cover the pot with the mussels.
  • Stir the mixture and boil for about a minute.
  • Cover the mussels with water and boil them for a few minutes more until they open. This takes approximately 3 to 5 minutes. They are ready once the shells have opened. Throw out any mussels that don’t open.

What to Serve With Mussels in White Wine Sauce

These mussels in white-wine sauce would be great served over pasta, such as angel hair or fusilli. You could also soak up the sauce by adding grilled or toasted toast to it.

Variations:

  • WineUse a white wine you can drink. Don’t use a “cooking wine.” If you prefer not to cook with wine, use more broth.
  • Spiciness:If you prefer milder food, you can leave out the crushed red pepper.

  • 2 pounds Live mussels, About 44
  • 1 Use the following as a guide: Butter
  • 1 Use the following as a guide: Extra virgin olive oils
  • 4-6 Jarred anchovies
  • 4 Cloves Garlic, minced
  • 1/4 Take one teaspoon Red pepper flakes crushed
  • 3/4 Cup White wine
  • 3/4 Cup vegetable broth
  • Kosher salt and freshly ground black Pepper, To taste
  • 1/3 Cup chopped fresh flat-leaf parsley
  • French bread sliced, grilled, or broiled, Optional for serving and dipping in the delicious broth
  • Under cold water, wash and scrub mussels.

  • Remove any beards, which are strings that hang from the musselshells, with your fingers or a paring blade.

  • Over medium heat, add butter, oil, and anchovies. Cook the anchovies for about 1 minute. Let the garlic and red pepper flakes melt for 30 seconds.

  • Pour in the wine and broth quickly into the pan. Season with salt or black pepper to taste.

  • Bring sauce to a boil. Let simmer for 3-4 minutes. Then add mussels to the pot and cover immediately. Let boil for one minute, then stir.

  • Mix the mussels together, cover and boil for 3-4 minutes, or until the shells open.

  • Add the parsley. Serve with grilled bread if desired.
