This is my favorite oatmeal recipe, which you can make ahead and serve to your guests! It’s also great for the holidays, or you need a potluck breakfast dish. It’s a warm, satisfying, heart-healthy breakfast your whole family will love. It feels like you’re eating dessert, only it’s loaded with fiber. This is the BEST Baked Oatmeal, Blueberries and Bananas. This is a great way to impress guests at brunch or make ahead for the week. The leftovers are delicious reheated just as well.

  • 2 Medium ripe bananas, Sliced into 1/2″ pieces (the riper, the better).
  • 1 1/2 Cup blueberries
  • 1/4 Cup Honey, Or maple
  • 1 Cup uncooked quick or old fashion oats*
  • 1/4 Cup Pecans and chopped walnuts
  • 1/2 tsp Baking powder
  • 3/4 tsp cinnamon
  • pinch Salt
  • 1 Cup Fat-free milk, Or any other milk you choose
  • 1 large egg
  • 1 tsp vanilla extract
  • Preheat the oven at 375F.  Lightly spray a ceramic baking dish (8 x 8″ or (9 x 9″) with cooking spray.

  • Place the banana slices in a single layer on a ceramic dish. Cover the ceramic dish with foil and sprinkle half the blueberries on top.

  • Bake for 15 minutes or until bananas become soft.

  • Mix the oats with half of the nuts, baking powder, remaining cinnamon, and salt in a medium bowl.

  • In a separate bowl combine the honey, milk and egg.

  • Take the bananas out of the oven, and then pour the oatmeal mixture over them.

  • Pour the milk mixture on top of the oats. Make sure you distribute it as evenly as possible.  Add the remaining blueberries, walnuts, and salt to the top.

  • Bake the oatmeal in the oven for 30 minutes, or until it is golden brown on top and the oatmeal has set. Serve warm straight out of the oven Divide in 6 pieces.
