Pollo Guisado (or Latin Chicken Stew) is a hearty braised chicken stew, popular in South American, Central, and Caribbean cuisines. It is easy to make and has tons of flavor.


Pollo Guisado (Latin Chicken Stew With Olives)

This pollo Gusado recipe is one of my favorite comfort foods, especially in cold weather. This chicken stew is my favorite. It’s rich in flavor and my family loves. I probably make this as often as I make picadillo, and if you’ve been following for a while, then you know how much we love picadillo! This recipe can be made in many ways, including my Instant Pot Latin Chicken Stewed with Corn and Sofrito Chicken Stew. We also love this Paprika Chicken Stir.

What is pollo Guisado?

Pollo guisado translates to “chicken stew” in English. As this stew is popular in many parts of South America, Central and Caribbean, there are many variations. The recipes can vary slightly from one country to the next, and even from one house to another. This recipe is inspired both by my husband, who is half Colombian and half Puerto Rican. Sometimes I add potatoes or corn to the recipe. Other times, I omit the olives.

Pollo Guisado Ingredients

Here are the ingredients in my pollo-guisado recipe

  • Chicken – I use bone-in chicken thighs and drumsticks – don’t use boneless. The bone adds so much flavor to the stew but I removed the skin to make it a bit healthier, and to be honest you don’t miss it. If you prefer white meat, boneless chicken breast is fine.
  • Spanish OlivesThe olive brine and the rich flavor of the olives give this dish a lot of flavor. If you don’t like olives you can omit and add more salt, to taste.
  • Seasoning –Adobo and Sazon are two of the most popular ingredients in this stew. Bay leaf and cumin are also used for flavor. Use sazon to make your own sazon.
  • Chicken bouillonSalt adds great flavor.
  • Aromatics and Herbs – Scallions, Garlic, Cilantro

How to serve Pollo Guisado

This Latin chicken stew can be served over rice with avocado or a quick cabbage slaw.

Freezer Tips:

You can freeze leftovers by placing them in an airtight, freezer-safe container. Keep it in the freezer for up three months. To heat, let the leftovers thaw overnight in a refrigerator before heating in the oven, pressure cooker, or microwave.

Variations:

  • Chicken: You can use all drumsticks or all thighs if you don’t want to use both.
  • Vegetables: Add corn, yucca or potatoes.

  • 4 skinless chicken drumsticks, On the bone, 14 oz total
  • 4 Skinless chicken thighs, 20 ounces on the bone, trimmed
  • 1/2 Take one teaspoon adobo seasoning salt
  • 1 Take one teaspoon Olive oil
  • 4 Medium scallions, Chop
  • 3 Garlic cloves, minced
  • 1/4 Cup chopped cilantro, Plus 2 tbsp garnish
  • 8 oz Can tomato sauce be made?
  • 1 Seasoning packet sazon, Optional
  • 1/4 Cup pitted green olives, plus 2 Use the following as a guide:s brine
  • 1 tablespoon Bouillon Better than Chicken, 1 cube
  • 1/2 Take one teaspoon cumin
  • 2 bay leaves
  • Season chicken with adobo seasoning Salt.

  • In a large deep skillet,  pot or Dutch oven, over medium heat saute the scallions in olive oil until soft, 2 to 3 minutes.

  • Mix the garlic with 1/4 cup cilantro. Let it cook for about 1 to 2 mins until it becomes soft.

  • Place the chicken in the pot. Let it brown for 5 minutes, then turn the chicken halfway.

  • Add tomato sauce, Sazon (if you use it), 1 cup water and olive, olive brine or olive brine, Bouillon, cumin, and stir. Bring to a boil.

  • Cook the chicken for 50 minutes on medium-low heat.

  • Cover the pot, turn up the heat and cook for 5-10 minutes.

  • Remove bay leaves and adjust salt to taste. Add the remaining 2 tablespoons cilantro.

This can be made in the Instant Pot

  • Cook on high pressure for 20 minutes.

  • Natural release, discard bay leaves, and top with remaining cilantro
