My daughter loves mini frozen bagel-style pizzas so I wanted to make a simple Pepperoni Pizza Bite recipe. Making bagels and topping them with pizza ingredients would be too time-consuming so I simplified the process and made them in muffin cups. How to Make Pizza Bites

  • Make the pizza doughCombine the dry ingredients, then add flour. Knead until the dough is sticky but not sticky. Premade pizza dough can be used to speed up the process.
  • Divide the doughDivide the 16 balls into small balls and place them in the greased muffin pan.
  • Bake the doughBake for 15 minutes at 350 degrees. Once it is done, take it out of the oven.
  • Top your pizza bites: Press the dough into the cups to make a well. Each cup should be topped with sauce, mozzarella cheese, and chopped Pepperoni.
  • Bake the bitesFor three more minutes, continue to cook the cheese until it is melted. Let the mini pizzas cool in the oven before removing them.

My pizza bites had turkey pepperoni. But you can top them any way you want! Here are some suggestions:

  • I made my own bagel dough to make my pizza bites more protein-rich, but you can also purchase pre-made pizza dough.

Pepperoni Pizza Bites look like frozen mini bagel pizzas. They are made from scratch in a muffin pan using my Greek yogurt bagel dough.

  • Olive oil spray
  • 1 Cup unbleached all-purpose flour, whole wheat or gluten-free mix*, (5 oz in weight)
  • 2 Teaspoons Baking powder, make sure it’s not expired, or it won’t rise
  • 3/4 Take one teaspoon Kosher salt, Use less diamond crystal when using table salt, or Mortons
  • 1 Cup non-fat Greek yogurt, It’s not yogurt regular, it will be too sticky. I recommend Stonyfield.
  • 2/3 Cup marinara or pizza sauce
  • 1 Cup shredded part-skim mozzarella cheese
  • 1 1 ounce Pepperoni turkey, Chop
  • Crushed red pepper flakes, Serve (optional)
  • Preheat oven to 375˚F and spray two 12-cup muffin tins with oil.

  • Mix the flour, baking powder, and salt in a medium bowl. Stir well.

  • Add the yogurt to the bowl and mix it with a fork, spatula, or a spoon until it becomes crumbly.

  • Lightly dust flour on a surface. Once the dough is kneaded, you can remove it from the bowl.

  • Divide the dough in 16 equal-sized balls (approximately 25 grams each).

  • Each ball should be pressed into the bottom of the muffin cups.

  • Bake for 15 minutes, then remove from the oven. To create a small well, press down on the balls in the middle.

  • Add 2 teaspoons sauce, 1 cup cheese and a sprinkle pepperoni to each ball.

  • Bake for 3 minutes or until cheese is melted.

  • Allow to cool in the oven for 2 minutes.  Use a paring spoon or a metal offset spatula and carefully remove the bites. Be sure to cut around any cheese that might have stuck to your pan.

  • Spray the pan again, and repeat with the remaining dough and toppings.
